Again, I generally don't consider anything made after Nemesis to be canon anyway. All I meant was that a ship something like the Kelvin might have existed, and been able to hold 800 people instead 203-430 people, but it would need to be in some role that made it less prominent to the excitement we see in TOS. Some have suggested a colony ship for the Kelvin; additionally I have suggested that it has long-range scout-like purpose and enters an area then sends out teams in shuttles to explore. That would be why it only has one warp nacelle: it needs little maneuverability since it goes into more or less one place and stays while smaller craft do most of the collecting of "strange new" information.
Why naturally. After all, the Kelvin is necessarily a precursor to both TOS and ‘09. That’s just science.

I found it on Pinterest, but at least one of them looks like it comes from the Technical Manual of 1975? And one from Doug Drexler's graphic created for the Defiant in ENT?
For the record, I do love me some vertical warp core images for the TOS ship, but not pushed that far back on the secondary hull!

One issue with the pipe cathedral in the engineering set is that the pipes come closer together going up, whereas the support pylons of the warp nacelles spread apart going up. So, any association between the two has to come to terms with that.
One approach is to have the pipes cross at some sort of convergence before heading up towards the nacelles, half on port and half on starboard. That approach sets a hard lower limit on how much vertical space is needed.
For the record, I wouldn't change the engineering set, never would I say that they should have inverted the pipe cathedral, because it's absolutely gorgeous, as is.

And so good and timeless that the SNW reimagining of the Engine Room and the "cathedral" is just an upscaled and more detailed version.
