If it's anything like the Legends EU Jedi there should be Jedi popping out of the woodwork constantly in the new era.

We (at this time) do not know the fates of the Ezra, Jason, Ahsoka, and Sabine. There are four right there. Plus you got the Kestis possibility. And who knows how many Force Sensitives and Jedi escaped via The Path and Vos. Some of that might be explored in the new Maul series. Some of that will be in the Ahsoka season two. And whenever the third of the Fallen Order games comes out.

Also, there's no reason why Starfighter has to be chronologically set before the NJO movie just because it (Starfighter) is being shot and released first.

"So far". Main thing is we haven't really gotten to the point in Legends where they started coming out of the woodworks. That mostly happened after the Thrawn Campaign and the Return of Palpatine.

The Mando film comes out soon to be followed by Ahsoka. After that we get to see where this action goes. Next year is the 50th anniversary of Star Wars, so yes a big film set in a new era. Post-Skywalker Saga trilogies.

I swear, in Legends the only Jedi who did die in Order 66 are the ones we saw killed onscreen in ROTS. And a part of me thinks one or two of those was retconned, though I could be conflating that with Samuel L Jackson's claim that Mace Windu survived.

Maybe you're thinking of Luminara and/or Quinlan Vos? Both of them were killed in the ROTS script though neither scene was shown in the film. Then Rebels revealed that Luminara was captured and executed later, while the Obi-Wan show disclosed that Vos had survived.
