So, how is it that there are so many encounters with the Gorn in this series but in TOS, the Gorn and their territory was completely unknown?

The phenotype presentation was unknown to Kirk.

The Gorn knew way more about Starfleet as they mimicked a ship approaching, wiped out a colony then set a trap convincing enough to fool the Enterprise.

Unknown to Kirk... and everyone in the colony, as well as Spock and everyone else on the Enterprise. Seems to me with this series encountering the Gorn so many times, they'd be an enemy Starfleet would be quite aware of... unless something happened that convinced them the Gorn had been completely wiped out.

Not like the rest of the crew had time to tell Kirk anything.

The colony didn’t meet any Gorn face to face or by that name.

KIRK: Can you tell me what happened?
MAN: Scanners reported a ship approaching. We get them now and then. They're all welcome to use our facilities. You know that.
KIRK: Yes, I know.
MAN: They came in space normal speed, using our regular approach route, but they knocked out our phaser batteries with their first salvo. From then on we were helpless. We weren't expecting anything! Why should we? We didn't have anything anyone would want.
KIRK: Easy. Easy.
MAN: They poured it on, like, like phasers, only worse, whatever they were using. I tried to signal them. We called up. Tried to surrender. We had women and children. I told them that! I begged them! They wouldn't listen. They didn't let up for a moment.
KIRK: Lieutenant, the Enterprise received two messages, ostensibly from Cestus Three. One for the Enterprise to go there, and the other for myself and my tactical crew to beam down to the surface.
MAN: They hit us a full day before you got there, Captain. No messages came from us, Captain. Why did they do it? Why? Why did they do it? There has to be a reason. There has to be a reason!

Starfleet and Kirk know what the SNW Gorn look like. This Gorn is using a new ship design, is more humanoid and has no tail. You'd be surprised if it was called a Gorn too. But as Kirk said, it's apparently also called a Gorn.
 
I just sit back and enjoy the episodes. I don't care about canon as much as I used to before SNW premiered. If you're gonna reimagine ST, there's going to be changes for this century just in the set design.

Sit back and enjoy like you did when TOS was on every afternoon at 4pm.
 
Remember when fans could roll with retcons and have fun with creating explanations instead of just blaming production crews as lazy?

Pretty easy to explain when everyone on the planet didn’t have access to every episode ever made, pretty much on demand.

Seems like it would be easier to keep this stuff straight now.

Not sure why it would be easier unless ever writer gets to binge through Trek or has a Trek primer or something. Not like we got more time

Well, we do have websites like Memory Alpha that does most of the leg work.

Though to the point, I think many folks wouldn’t have an issue with discrepancies if CBS weren’t so on about this fitting together.
 
It really irritated me (and still does) when Enterprise disrupted continuity with their Ferengi and Borg episodes. And don't get me started on Discovery.

I can't explain it, but with Strange New Worlds, I don't really care that much. I know I'll probably have bricks thrown at me for blasphemy, :ouch: but I don't think I would mind if they retconned the whole TOS series with the new actors, ships, etc. I'm just enjoying the ride.
 
My two cents...

As a Trek fan fiction writer, Memory Alpha and Beta are my friends. It's much easier today, in part, because of them, than even when I first got into fan fiction about twenty years ago. But even then, you could find transcripts of episodes. Also, its way easier, courtesy of streaming, to just look at old episodes or movies if you've forgotten something or need clarity about something.

Oh, I am for completely decanonizing TOS. It really is nothing like any of its offspring.
