Admiral McCoy was fairly spry for a man of only 137.
Although some non-canon works have taken it as commonplace, I always felt that McCoy reaching 137 was far more the exception than the rule for Human life-spans in the 24th-Century. Even an average increase to 100 would represent a major increase in Human longevity compared to what we have today, IMO.True but I have my own questions on McCoy too...
As far as the chances of a Picard spinoff, I'm having second thoughts about it now. With the apparent burst of the streaming bubble, Paramount+'s internal issues, and more and more studios looking for ways to cut costs in general, I think the window of opportunity for a Picard spinoff is closing as time drags on. Assuming Starfleet Academy doesn't bomb, I can see that being the sole Trek series when SNW ends and any future series being a spinoff of those shows rather than Picard.
