We have whatever Baylon Skol is after to deal with in S2 of Ahsoka. We have the potential return of the Nightsisters to power on Dathomir. There were plenty of Force cults based on Jedha back in the day. I image most Force cults went underground during the time of the Empire, especially after what happened to Jedha. Many may or may not have learned of Palpatine's end and the death of the Sith. The Jedi had The Path for at least ten years hiding Force Sensitives from the Empire and then you have whatever the fallout from the eventual third game for the Jedi: Fallen Order series will be for that part of The Path.
We also have a few other loose Jedi threads that are not just wrapped up: Jacen Syndulla and Ezra Bridger. Sabine Wrynn and Ahsoka Tano. Grogu. And that is only present day Mandoverse stuff. The assumption is that they are all gone by 35 ABY for Rey to be the Last Jedi. But we have been down that road before with Luke Skywalker being the Last of the Jedi, while all five of those mentioned were around (Luke probably knows Jacen personally, though the kid would be like four years old when the Rebels were going to Endor). We still haven't gotten the story of when Luke met Ahsoka, or when Ahsoka returned and met up with Sabine. We know it was sometime before the war ended, since she had started training Sabine before the Great Purge of Mandalore.
So there are a lot of paths and weaves already in the mythos that can be applied to Rey's New Jedi Order films set probably around 50 ABY to account for Daisy Ridley's age.
