Actually if Geordie can recreate the Enterprise D with his crew why would the E be problematic even if they have to start from scratch and use replicator made parts of the old girl?

I doubt much of that saucer was reusable. The whole underside must be in bits. So substantially the original is a bit of an exaggeration.
Lets be honest the reason the D was easier to recreate is it was made of memberberronium.
Enterprise-D was "easier" to rebuild because the guy rebuilding it was passionate about it.

There was at least some of the E-D left. We have no idea what happened to the E. There may be nothing left at all.

That's ok; it will buff right out.
Rikeronium. It can lift over any surface without damage and throw itself the distance.
The whole saucer crash sequence was weird. We get a closeup view of the leading edge of the saucer at the end, after it plowed through several hill tops, with unbroken windows, yet top surface windows which had no real contact with anything shattered. Even the tiny dome above the bridge broke and from the later rescue scene with the shuttles there is not even dirt around it. I know it was for more dramatic reasons but it just made the whole scene seem contrived

You can still see the scorch marks on the saucer from reentry in Picard
Really, did they not have any kind of shields up? I thought those stop reentry marks.

I mean...how could it? The stardrive section was gone.
The production's plan was to destroy the 1701-D so they could replace it for the following movies. Unfortunately, it was the dumbest way possible, easily taken out by a 100-year old scout ship (so they could use the previous movie's stock footage explosion), and then completely ignoring that the saucer section had it's own impulse drives and should have easily been able to fly away from the exploding star drive section.
I will say the damage on the top of the saucer was somewhat... odd.
Although there was an indeterminate passage of time between the crash and then seeing Picard/Data picking up in the bridge. It's possible that a search and rescue team had shown up and but through sections of the hull in order to get in, the bridge would be a logical place to look for survivors.
