"If Memory Serves" kinda torpedoed that idea when they showed the Enterprise using clips from "The Cage."
Just because not every visual detail lines up doesn't mean they should be afraid of showing it, as if acknowledging the retcon is going to incur the wrath of some lore gods. None of the trek fans in production are going to say "
oh no these two episodes nearly 60 years apart don't perfectly match up so we can't show it, hide Jeff Hunter, never show the Enterprise!" Many of these people are fans, they feel nothing to be ashamed about even if things have changed since then. It's just...reality!
Even with SNW's intention to retcon the Pike-era appearance of the Enterprise as a stepping stone to its later TOS appearance, it doesn't mean nobody can ever acknowledge the original episode again, that'd be silly. For
Memory Serves they wanted to make a fun little "
previously on" intro with decades in-between, because that's fun and unique. It really doesn't have to be any more complicated than that. There's a very different attitude between the people making this stuff and some of the fans that consume it, there are different priorities.
It's really only from the perspective of an enthusiast at home that the flashback even suggests any significant implications. I am certain nobody in production was intending its inclusion to serve as a statement about the ship's construction history. Just because the lore has moved forward since then doesnt mean anyone feels the need to pretend the past didn't happen. It did, and it's okay to acknowledge it. Plus, it's not like the "Previously On" was a holovid that Pike was watching in his quarters, it's a meta moment for the viewers' enjoyment anyway.
The
intention for canon from those involved in production is that the SNW version later gets refitted into the TOS version, but nothing about that means anyone wants to hide TOS under the rug. Which has only become even more clear recently with a TOS Constitution appearing in Picard season 3. The two versions coexist peacefully in canon (even on the same show together as both have appeared in Picard), as long as you're willing to accept a minor retcon of a single story from 60 years ago and not make a mountain out of a mole hill about it!
