I'm not sure that Pike's quarters are any wider than Picard or Janeway's, just a bit deeper and with a ceiling that's flat rather than sloped. Ditto when you compare Spock's to Riker or Tuvok.
 
I think they are more than deeper. Pike has a full kitchen in addition to the living area and bedroom. Picard had to have that kid that had been kidnapped by the Tamarians sleep in a hammock.
 
While they are certainly large those shots above are with a very wide lens.

It's certainly a change of idea that your quarters are a large space for you (although to be fair, Pike uses his as a common space fairly often) as opposed to TOS where your quarters are tiny (but still yours, not shared) and there are common areas for you to spend time in your off hours.
 
I wonder if there will be something where these very spacious areas start to get reduced in size to accommodate the 430 crew complement eventually? Or will it just be something that ends up in head canon in the transition from Pike to Kirk?

I would imagine a 50% increase in crew compliment would require some reworking of accommodations.
 
Okay..non-bridge officer quarters or senior officer quarters.

We saw the "main character" quarters frequently in both shows. We saw normal crew quarters a few times in TOS.
As I recall we saw that Kirk, Spock, McCoy, Uhura and McGivers all had the two room layout. They used just the office area of the officer’s quarters set for Ensign Garrovick’s quarters, I guess to show as an ensign he had only a single room.
 
What do crew quarters look like? I don't recall if we saw them.

We saw Kirk's quarters a number of times (These are just off the top of my head from season 1. There are probably more episodes where this was the case):

We saw Yeoman Rand's quarters in:

We saw Lieutenant Uhura's quarters in:

They're not trying to match this to all the details of the old show.

Every space on this ship is several times the size of the old version - sickbay, briefing room, bridge, transporter room. The ship's bigger.

Nearly 150 meters larger in fact. She's closer in size to the Excelsior than anything.
