What species was/is Captain Angel?

I suppose they could be one of the hundreds of species that are indistinguishable from humans, but when in doubt, I would just go with human.
The person Captain Angel was impersonating, Dr. Aspen, was identified as human, so it would make sense for Angel to be the same for when they got scanned as they beamed aboard, or with a medical tricorder.

Doctor Aspden could have been Angel’s identity before they transitioned. They might have given that life up to go ‘space pirate’ and taken on the name of ‘Angel’. I hope that I don’t cause offense to anyone by assuming that Angel has transitioned, they might not have done. This was never clarified on screen. We don’t even know their race. All we know is that this character is gender neutral and a pirate. We have no further technical details as of yet. Perhaps this will all be clarified upon Angel’s next appearance in Star Trek.

I do think that Doctor Aspden was a real person though, so either Angel killed and replaced them taking on their identity or Angel is *still* what was Doctor Aspden in a new persona/‘rebirth’. Assuming that you are telling the truth as I can’t be bothered rewatching the episode tonight, couldn’t someone go and rescue Dr Aspden? They might still be alive…. Unless they has died as a result of being abandoned by Angel? If Angel mentioned that they had marooned a Federation citizen who might even been a commissioned Starfleet officer, then surely the crew have a duty of care and should launch a rescue mission?
Was Dr Aspden gender neutral too? Why did Angel ‘target’ someone so similar to herself? This is too much of a coincidence? Or did they specifically target a fellow gender neutral/trans character as part of their cover?

If you were being very thorough though and wanted to have your story stand up to a detailed background check, it would make sense to take the identity of someone who closely matches your own description.
Angel says they left Dr. Aspen alive, so the presumption is that the uninhabited planet has a breathable atmosphere, a survivable climate, and that Aspen is not going to be eaten by the native wildlife the moment they were dropped off. The assumption is that they were rescued by the Enterprise offscreen. It's just not important enough to show, because you know Pike is not the type to leave someone to die alone when there's something he can do about it.

The Federation will be instituting this practice shortly after Starfleet installs seatbelts and other basic safety devices in the operational areas of their vessels.

Of course they did. Pike and Starfleet in general are not the type to leave someone stranded on a planet. It's just implied, not something necessary to show onscreen.
Captain Christopher "STARFLEET doesn't leave anyone behind" Pike probably didn't mention it and they're still stranded...
also Angel's use of the term "wandering around" would seem to suggest that Aspen is expected to survive long enough TO wander around....
Perhaps Aspen could get in some good skiing while awaiting rescue?
