I think saying they hadn't spoken as "father and son" could imply speaking informally in a private familial setting and leaves some wiggle room for them to speak to each other formally as officer and ambassador while keeping it strictly business, though Spock should let a little bitterness and anger slip past his calm demeanor every once in a while, and even argue with a decision Sarek made.
Or the can have Amanda or Pike play relay between them until Pike gets sick of it and locks them in a room.
There is no discrepancy that needs to be explained. Spock and Sarek do not speak together in Discovery season 2. Sarek speaks to Michael and Amanda.But Discovery season 2 is set in 2257 and Sarek appears? Did I miss them falling out? Is this a discrepancy which can be explained via the multiverse theory or is there more to this story than meets the eye?
The falling out happened years earlier when Spock turned down the Vulcan Science Academy in favor of Starfleet.
Not sure what is so "controversial" about this. Unlike what Disc tried doing with Burnam, this is not an attempt to force a new character into a legacy character's family. Sybok is well established as being part of Spock's family and we know next to nothing about him. I can't wait to see where they go with this.

Given the probability that Sarek was bonded at the age of seven (and why would he not have been?), his bond-mate would be Sybok's mother. They never formally married; Spock confirmed that Sarek fathered a child out of wedlock. It's also within the realm of probability that Amanda didn't come along until much later, allowing for what could be a considerable age difference between Sybok and Spock. Plus, Sybok may well have been grown and gone before Michael ever entered the picture given onscreen evidence (or lack thereof) in various flashbacks. I doubt there was ever much of a familial relationship between Sybok and Sarek's "other family" at all.

In the same scene Amanda says that Spock hasn't come to see them for 4 years, so it's not that there was no contact; it's that Father and Son were not speaking as father and son. They were probably keeping things very professional with respect to their current positions.

There's just no need for that and it'd be needlessly confusing. Quinto himself would probably agree.
They probably couldn't get him but how about Oscar Isaac for Sybok? He might as well add Trek to his franchise list.
