A series set around Sato – and I don't mean the mirror universe version this time – could and should work. Someone who has a background in linguistics and has dealt with first contact protocols and situations should be able to have interesting stories to tell.
Maybe take her out of the Starfleet setting altogether and see how she interacts with other species. Surely freighters, fledging colonies, various academics and Federation comms officers new to the job have a need for her during that era.
I’d watch that for sure.

Meanwhile Mayweather is so forgotten that he’s not even remembered among the underused characters.
I think there are quite a few episodes where he doesn't even have a line.
And in the majority he barely has one.
I'm not sure how. It’s Sato dealing with Vash-like characters, uncovering mysteries like the origins of the Iconians. Mixed with a revisit to ENT’s original concept, but with her being a seasoned veteran this time, and the writing quality of ENT S4. It’s very TNG-like. For a 13 episode season that has arcs that go 2 or 3 episodes with the odd standalone episode, that 4-6 stories a season. Leaving very little room for the filler that made the first 2 1/2 seasons of ENT drag a bit.
Would allow for various ENT characters to make a reappearance again, if the story makes sense.
Then add Mayweather and call it The Sato & Mayweather Adventures. Have Mayweather tell space boomer stories and get into barfights with space pirates.
While we are at it, add Phlox to the mix. Since Phlox and Sato were close like Sato and Mayweather.
All right, Hoshi gets the stories and Mayweather gets to drive her around and utter the occasional “yes Hoshi”.
Well, the Horizon isn’t going to fly itself.

Perhaps Streaming Trek will have a new series set in the ENT era where a recast Enterprise crew makes a few appearances in it.
An entire series is a bit much. She could of course be cast as a descendant. I mean, I laugh at how that only seems allowed for Brent Spiner!
Bad character development. Recycled from Harry Kim. Also I don't know if the acting chops were there, though I felt that about a lot of the cast. Few have been seen in much of anything since.
He's the Horizon's captain.
Montgomery was a regular on General Hospital for several years. Blalock married a zillionaire and left acting. Linda Park was on Bosch for many years, and has a role on For All Mankind.
I haven’t really seen Trinneer much, although my wife tells me he has appeared on 9-1-1 several times.
Don’t know about Keating…?
Looks like he had some film work in 2020, including Tom Hank's Greyhound.
