Helm Controls

No kidding. Helm is 6x6 buttons (36), but the bottom 6 are overlay buttons, which change the purpose of the above 30 buttons. So it's 30 buttons, but with each button having 6 different functions depending on which overlay button is active. That's 180 UNMARKED buttons to remember......
Who says they're unmarked?
The labels (and other information) probably appear as required on that shiny black glass which the buttons are mounted in :D ;)

The problem I always had with the overlays is, what if you need to fire the phasers while you're doing evasive maneuvers?
 
I'm pretty sure all the actions on the ship were scripted and coordinated to approximate actual functions...

And, WTF is up with that GIF's color? Look at the sign seen left of the guy's head. It's purple, then it's blue, then it's purple again (the sign is actually blue).
 
But having to program the custom key in the midst of battle would be a pain wouldn't it? The majority of the time you would not be in a battle and having to use that.
 
I don't have a reference, but I seem to recall that when the DS9 production crew rebuilt the TOS sets for "Trials and Tribble-ations" (Or maybe when the Enterprise production rebuilt the sets for "In a Mirror Darkly"?) They did put TNG style alphanumeric labeling beneath the resin jewel controls and were surprised to see that while perfectly visible to whoever was seated in the chair, they were totally gone to any viewer standing elsewhere. So I propose that the buttons themselves (in universe) always had labels that were only visible to the crewman seated there.

The best console action was Gary Mitchell's relaxed swipe or whatever he did with almost the back of his hand XD

It was to give Kirk access to the ship's PA system, or as the characters put it:

KIRK: Address intercraft.
MITCHELL: Intercraft open.

...which illustrates that TOS' creators were thinking about a type of control more advanced than the rest of the bridge controls, although it was never used again, for some reason.
