According to STO's lead ship designer, La Sirena from Picard is around 85 meters long, or at least that's the size CBS gave them for it
I think you're confused. Riker's ship was the 'Zhang He', 'La Sirena' is Rio's ship.Is that not around the size of the Defiant? Which would indicate that the ship Riker led being part of a kind of peace keeping task force or response squadron like Sisko mentioned the original Defiant was supposed to be.
That would make it half the length of the Defiant, if you go by the DS9 tech manual number of 170.68 meters, and according to DS9 Visual Effects Supervisor David Stipes, the CG model of the Defiant was 170.5 meters long. That number of 85 metres is roughly just over ⅔ of the length of the Defiant class ships.

I think we've asked this one : should there still be Defiant-class ships in service in Picard's timeframe? I'm inclined to say "yes".
Because, since production personnel thought it was okay to re-use anachronistic 23rd century Discovery-era shuttles and capital ships early on in a series and short episode taking place in the dawn of the 25th century, why not the Defiant?
But they did, so there's no reason whatsoever why they can't do a Defiant or other mid-late 24th century vessel.
Time and manpower? Rumour is they had a week to complete the shot. But they did, so there's no reason whatsoever why they can't include a Defiant or other mid-late 24th century vessel as background fleet flotsam.
