Donny's Refit Enterprise Interiors (Version 2.0)

Regular crew, too. I expect people working on the ship would've started living on it as soon as they were able to. Decker, Uhura, Sulu, Chekov, Scotty, Rand, and Chapel has probably been on the ship full-time for weeks, at least. Probably months.
Basically what I was going to say.

Well, I suppose most of them could've been "commuting" from their homes on Earth via transporter and shuttlecraft, but they still would've been moved-in for a while. Anyone who wasn't from Earth, though, probably lived on the ship rather than in the drydock, Orbital Office, or groundside bases. It's not just a matter of convenience, getting everything set up right in the accommodations and human-factors would be as much a part of the rebuild as anything else, and no one wants to be halfway out of the solar system the first time they stay the night on the ship and find out the sonic showers on odd-numbered decks don't warm up when more than three are being used at once.

AFAIK, that's the 8 foot model. I can't account for the discoloration. Maybe @Maurice knows otherwise?
It's the same model. It's just the lighting and filtering. They used a matte painting for the bridge and airlock when the shuttle does its flip, but not for this shot (otherwise they'd have gotten the perspective right).

Given the camera equipment of the day, could they have managed to get the perspective right using the model without removing the bridge dome to give the camera room to get in closer?

I'm sure that Decker had a mix of people. Sulu, Chekov, Uhura, Chapel, and Scotty all staying on the Enterprise doesn't stretch credulity too much, IMO. After all, that's only four people out of a crew of 400+. And Chapel and Chekov had moved up to new positions. But yeah, maybe a couple of them signed on at a moment's notice.

^^ It sounds like this was possibly an homage to Traitor Winds by L.A. Graf, where Sulu was working as a Starfleet test pilot in White Sands, New Mexico during the time before TMP. Is that the case, @Christopher?

In the 1977 rough draft of "In Thy Image" by Harold Livingston, Admiral Nogura basically browbeats Kirk into realizing that he's the best qualified Captain for the job:

I've always thought that that scene worked pretty well, but I guess they decided that the story worked better if Kirk was the motivator of him taking over the Enterprise.
I would say that the crew at the front during Kirk's briefing are the ones who are part of the crew overseeing the refit. Even Rand, as a CPO is an experienced non-com who might have been working closely with Scotty to get the junior crew working where they were needed.
 
Would a 2280s replicator/food slot resemble those on the Enterprise A in TUC or would that be too far of a jump?
I mean, I could go that direction, but since the TUC food slot/replicator we see in Kirk's quarters / crew quarters is the same exact set piece as the TNG replicator but with a different graphic, I'd rather do something different for the sake of being different and showing that this is earlier than TNG.

Dunno what this inference is based on, but the radial grid below the container inside looks like it could be a heating element?

I always considered the galley was to prepare special meals, like in TOS for Thanksgiving or the dinner in TUC, whereas the food synthesizers were used on a daily basis for the crew.
 
I'm unsure whether "replicator" is an anachronistic term for this time frame. The term was first used in season 2 of TNG, and refers specifically to transporter-based instant fabricators, whereas TOS food slots were meant to be merely an automated dumbwaiter system delivering meals that were either synthesized or quick-prepared from preserved ingredients by a robotic kitchen somewhere behind the scenes. But it's unclear when the transition between the two systems occurred. Did we ever see a food slot in operation in any of the TOS movies? I think we see Scotty using one in TUC when he's poring over the blueprints, but I don't remember if we see how the order arrives, whether it materializes in place or not.
 
Scotty already has his coffee when the scene begins. He walks over to the vent to investigate why the air flow is off and finds the missing radsuits.

Did they ever put anything in the sets — most likely the Rec Deck or Kirk's quarters — in TMP or TWOK that was supposed to represent a food terminal of any type? I know Lora Johnson devotes several pages to it in Mr. Scott's Guide, and she describes it as a transporter-based system (with a much more limited menu than what we see in the TNG era). I don't know if that was based on something she saw on the soundstages or just extrapolated because they still have to eat.

I think the idea was they could use it to beam small things like repair tools, medkits, etc. Random bits of string. A Michelin map of the Neutral Zone. Extra glue to hold The Shat's wig in place... ;)

I know that's what that station was supposed to be, but did we ever see it clearly enough to confirm what it was or how it was put together? I've always assumed that it was meant to be a one-person transporter booth or something, if someone needed to beam directly to/from the bridge. (Perhaps my thinking was influenced by the MEGO bridge playset.)
