To be fair we still don't know why despite transwarp tech they don't just transwarp everywhere around the galaxy already. Why aren't the Dominion engaged in war with the Borg for example?

Maybe, but for the sake of the Milky Way Galaxy, I hope not.
It seems like they were slowly conquering things one by one.
But I bet Janeway's destruction of the Transwarp Hub Network slowed them down quite a bit.
Think about it, why would they need a Transwarp Hub Network that's constantly running if each Borg Ship can go create their own Transwarp Corridor by themselves? It must be very energy intensive to create a Transwarp Hub corridor by itself. Ergo having pre-made corridors constantly running makes sense for the Borg. Especially if the Hub is right next to a star that is powering it.

Perhaps because the Borg can't assimilate a Founder?
And assimilating a Vorta Clone or Jem' Hadar would not add any new technology.
Since neither side considers the other a threat, there's no need to attack each other.

They may not have got around to the Gamma quadrant yet, after all it was only relatively recently that they travelled to the Alpha/Beta quadrants.
Or perhaps as you say above they have had skirmishes in the past and the Borg cant assimilate the Founders or the Jem'Hadar.
Same goes for the Vorta as they are genetically engineered as well.
Enterprise-D baby, I'm telling you Riker has rebuilt it and it's in active reserve like he is. He's going to show up in it to save the day!
Maybe someday we'll see an ep where The Queen shows up asking for help. Says she was deposed and it was only her whims that kept Earth and frankly the entire galaxy from being conquered.

This is Star Trek Picard. Picard is untouchable (at-least until the series finally, anyway). Everyone else is expendable. We already have previous stars/guest stars killed off: Maddox, Icheb. Now it's going to be Hugh. And most likely he is not the last one. It's not a given that all of the Picard crew will also survive the season. For all we know La Sirena is not going to last the season either. Anything goes, and it's fantastic!

On paper the Borg nanites should work against a Founder as they are organic but probably not in a way that would be useful to the Borg.Be interesting to see a confrontation between a Borg Drone and a Changeling.
I guess there would be a lot of intermingling of Borg nanites and Silvery Fluid.
Unless the Founders are naturally outright immune like Species 8472.
That would be awesome if he had the Saucer section salvaged from Veridian III and had a new Engineering section built to replace the one he lost. Then upgrade the system with the Spinal Phaser Lance =D and cloak, but leave the 3rd Nacelle off. That was just Ugly IMO.
(picturing a haggard, bearded Riker walking through the leveled forest of Veridian III with a metal detector...)

I reckon Elnor is safe and obviously Soji at least for now but the rest are expendable.

Yep, none of the AGT stuff. Sauce was "un-salvageable", but that was about 30 years in-universe time. New technologies could have been developed to be able to salvage it. And for engineering section, they don't need a new one. Plenty of Galaxy class ship were around during Dominion war, including class-leading USS Galaxy herself. If her saucer was heavily damaged, I could see them mating Galaxy stardrive with Enterprise saucer. I'm telling you... It's going to happen...
