Do they also celebrate first contact between the Vulcans and the Andorians then? Or the Vulcans and the Tellarites? You can't have the Federation without all four after all.
At least in non-canon Trek literature, the Human-Vulcan first contact is seen as the pivotal moment of local galactic history. Vulcans had made first contact with other species before, but contact with Humanity transformed their society. Ambassador Solkar said outright that the Vulcans recognised themselves in Humans.
Books like "Federation: The First 150 Years", and "Picard: Autobiography" also stress the significance of the event.
It is not about Alien Species A meeting Alien Species B, it's about two disparate cultures meeting, finding they're two sides of a different coin, and then building an unprecedented interstellar union of species. While in the distant past other such unions were formed (Star Trek: DTI book series), in canon nothing before and nothing after has coalesced into a federation like that.
I dunno man. I guess I could see the Vulcans celebrating First Contact Day. But I see no particular reason why Andorians, Tellarites, or any of the other Federation races would. Federation Day seems good enough.
I think if you're on Earth, or in Sol System, you're probably celebrating First Contact Day. It's like if you live abroad, or are on a holiday abroad, you'll often celebrate whatever the national holiday/event is even if it has little significance to you yourself. You're buying into the culture.
