Burnham certainly extolled the benefits of a stint about a Constitution class ship, but I get the impression that she only dropped the name "Enterprise" because it was the one Spock served on, hence the first one that came to mind

Yeah but why the Constitution class when we see so many other ships like the Europa.
What makes the Constitution class and specifically the Enterprise so much better than the rest, it doesn't have quite the pull to me it once had after seeing all the other ships in the show.
Perhaps we will find out next season.
I've never been a fan of the JJ-prise 700+m length, but in my old age I have come to peace with the fact that the size of the TOS E is too small for the interiors we see. I'm content with a 400-ish metre length, and believe it has always been about that big.

Mission role would be the primary rationale for Burnhams speech. In giving Tilly advice for how to move up the chain she just gave her a path that would be most lucrative for promotion/experience (probably from her own experiences/others she's known). So makes sense she'd advice Tilly to endeavor to get assigned down the road as a more senior officer to a ship that is conducting more specialized missions before gathering the experience/years to promote to her own personal command. From what we gather from just that short conversation, the captains history records, and TOS Constitution class ships are out conducting deep space missions beyond the borders of Federation space. They have a notable history with having distinguished captains, and even though they are not the largest ships in the fleet compared to others they are probably more advanced and mission specialized allowing for them to more efficiently tackle those long range missions.
As for size, coming in at a new ~450m the Connie is not too much smaller than the Walker, Shepard, Nimitz, or Cardenas classes (referencing the poster). On top of that mission role plays a huge part just as it does for modern naval powers. The Walker is clearly old and may have even been the previous generation of long range explorer before being outmoded by the Connie now being reduced to just local exploration/border-patrolling like the Shenzhou. The Shepard looks to be a destroyer/light cruiser that can zoom about quickly through federation space, and is more than likely the largest quantity produced and primary workhorse of Starfleet. The Cardenas looks like a heavier ship and is probably the guns of a fleet being the predecessor to the eventual Constellation Class. It may conduct similar missions to the Connie but with variations in mission role. Just like various fast attack sub classes do similar yet different missions dependent on load-outs and general capabilities. Finally the Nimitz looks to be the pride of the fleet more than likely being the battleship/carrier of the Federation. Probably only a few of them built commanded by flag officers for various duties including diplomatic missions, mainstaying a battlegroup/fleet, and of course parading about as regional symbols of Starfleet. Even though all of these ships are similar(ish) in size each can play a very different role with specializations that can only been seen under the hood. As for the Connie they're blazing trails into deep space going where no one has gone before.

Its all we have got for the moment and matches what has been shown in other media.
So for now that's how big it is.
Yeah the Europa looks like a Miranda class with two extra nacelles and the Edison does indeed look like the Millennium Falcon for no real reason whatsoever, except it flies backwards.
To avoid any copyright issues I guess.
If enlarging a ship makes the interiors fit maybe it is justified. Just to have the main ship the Biggest of all Trek is not.
