I read that story. I also followed up on the Borg baby's fate in one of my own stories. She was not the focus of the story, so it was mostly a passing reference.

They matured her in maturation chamber, slapped on a uniform, and put her to work building it? sound about right? or Just out there being a baby mascot? ;d
They had to hide her for some mysterious reason and that's why we never saw or heard of her ever again.
I think Janeway and the Doctor referred to the baby as "she" when they were talking about her.
