Private moments that were not shown

And it would have added more reason for Kirk to resist leaving. The only reason he allowed her to die in the first place was his duty to set history right. I think that only a very strong sense of duty would prompt him to leave her again.

Eh, I never had a problem with the fact that they gave us a glimpse of Kirk's life in the many years between movies and that they made things more interesting by establishing that he'd temporarily left Starfleet. Antonia represented a road not taken from his more recent past...he'd sacrificed an actual shot at happiness for a career that was now over anyway. Settling down with Edith was never really an option in his life, and fans tend to over-inflate her importance in Kirk's story.

2. Spock sneaking in Kirk's cabin to give him a mind-meld after the death of Edith Keeler... "Forget."

But...he needs his pain!

That's a good point, but if they don't mention the last name, "Keeler" could he get away with it without a lawsuit? Shirley, he doesn't own the name Edith. But then McDonald's sues when people try to use the letters M and C together.

Of course they could have substituted Miramanee instead of Antonia. She is my second choice after Edith, but a good choice, too.

... The Nexus granted people their fondest wishes, so that's why Picard ended up at a Christmas party with a family he never had.

With a wife that bears more than just a passing resemblance to ... you know who!

He had nostalgic feelings for her. That doesn't mean they were "deep." We never got to see them really interact beyond staring at each other and saying "hello."

I'd say either her or Carol Marcus (Bibi Besch didn't pass away until 1996). Those two are the only ones that I can see Kirk really wanting to make a life with.
I think it was more that Carol didn't want a life with him. She impressed me as a very independent woman who doesn't need a man in her life.

I would have liked to have seen a scene where Kirk leaves the Enterprise with his command crew, finds a bar and the entire gang gets wrecked whilst discussing the five year mission which they have just returned from - Kirk admitting that he was careless and arrogant at the beginning, but that he had learned much as from space as he had from his friends

True. But that wouldn't necessarily stop Kirk from wishing that things were different.

A deleted scene from STVI was going to show that they had reconciled and were together once again.

There was a scene a bit similar to that in the Peter David-written, Robert Greenberger-edited Star Trek #53 from DC Comics in the 80s. Spock beamed an extremely drunk Kirk and Scotty back to the Enterprise after an apparently-eventful shore leave.
