Just been watching Undiscovered Country - when Kirk orders the ship to go full astern, the ship reverses with a turn to port and tips the saucer forwards

Indeed - especially when you think there was a woman at Helm - women at the helm of the Enterprise do not normally go well... Jae, Allenby, Gates and Ro excepted
It's a starship, not a car.
I just watched that scene and if there is any tipping of the saucer it is so minuscule as to be barely visible - I did not see it.
There is a very slight turn of the ship as it reverses but I'm not convinced this is anything more than a minor course correction.
The whole scene is less than 3 seconds long.

Enterprise goes astern and then, just before it cuts to Chang, you see the ship execute a reverse port turn with the saucer tipping forwards ever so slightly...
I've never read that as the Enterprise tipping forward. It's just the camera angle moving at the same time as the ship.
There is a tilting forwards as the turn happens... Okay, its maybe a degree or two, but its there

Noticed something else from the film... When the Enterprise enters the system, there is a young female officer at Helm. Within a few seconds, the first torpedo hits Enterprise, the officer at Helm has been replaced with an enlisted crewman

At the end of the film you can see the back of the helm chair is blowed up real good (link), so I bet the woman at the helm got zapped in a 'splosion in some deleted moment and cadet WASPy lept in to take the helm.
Huh, never noticed that before, either.
Except the seat is undamaged when the first torpedo hits Enterprise and causes the enlisted guy / cadet to be thrown from his seat. It can also be seen undamaged when Kirk gives the "FIRE" order

For being a so-much-better film than TFF, we can overlook a few minor continuity problems.

Actually, I was more interested in that cute little lady in the galley that does the same turn twice... man oh man would i like to launch a boarding party on her
