There is a very slight turn of the ship as it reverses but I'm not convinced this is anything more than a minor course correction.
The whole scene is less than 3 seconds long.
I've never read that as the Enterprise tipping forward. It's just the camera angle moving at the same time as the ship.This video shows it at 1:25

At the end of the film you can see the back of the helm chair is blowed up real good (link),
At the end of the film you can see the back of the helm chair is blowed up real good (link), so I bet the woman at the helm got zapped in a 'splosion in some deleted moment and cadet WASPy lept in to take the helm.
For being a so-much-better film than TFF, we can overlook a few minor continuity problems.
Plus, TUC had that awesome Christian Slater cameo.
