Fascinating (Spock), multiple times.

Normal is what everyone else is, and you are not (Soran, Generations), everytime there is a question about what is normal.

Trust is earned, not given away (Worf). Used it one time IIRC.

Bad manners are the fault of the parent, not the child (Dukat). I could use that one everytime I see a child not behaving properly.

I changed my mind. Captain's prerogative (Picard, Generations). I'm sure I used it once!

I know engineers: they love to change things (McCoy, TMP). Used that quite a lot a few years ago.
 
Just this morning, my wife was freaking out about not being able to find some school work, and I told her the same thing Admiral Kirk told Dr. McCoy when the Dr. asked if they were "just going to walk through them"(Spacedock doors, TSFS)......Calm yourself, Doctor!
 
Though not a dramatic moment I did quote ST just yesterday. Wishing to add holly bushes to my garden I noticed that there were already 2 different types of Holly planted. They looked and grew exactly alike so if it weren't for the tags, I would not have been able to tell them apart or even have known that they were of differing variety. When deciding which type to buy to match what we already had, I quoted Spock and said that it really did not matter since they looked and grew exactly alike and "A difference that makes no difference is no difference". I believe Spock said this though I am not sure of the episode.

That's actually from the James Blish novel Spock Must Die! - I don't think Spock ever said it onscreen, but I'm entirely willing to be proven wrong.

On a related note, just the other day I was talking to a friend I hadn't seen in a month or two, and when she expressed surprise at not knowing about something that had happened recently, "I told her, "That's what you get for missing staff meetings." :)
