Your approach?

I'm writing this before reading the rest of the thread, so if it seems to crib ideas, I apologize.

I don't mind an origin story, but I wouldn't have crammed it into one film. I think the Trek characters are worth of a multi-film origin story, at the very least, a trilogy. Since it's a reboot, we're not worried about continuity, but I'd have it stick where it doesn't alienate anyone who's never seen Trek before. I'd have the series go something like this;

Movie 1: Kirk's academy years where he meets a couple of the major characters, saves the day and he graduates with honors, beginning his career on the Farragut or something. People we meet: Gary Mitchell, Finnegan, Spock, Bones, a girl Kirk falls for.

Movie 2: A few years later, Kirk is first officer on the Farragut, there's a major event where he, Spock, and bunch of others have to save something or other. We see the Enterprise for the first time, commanded by Pike, with Spock and first officer. Kirk works with them but meets a huge defeat, where his lady love is killed, the villain escapes, but his actions, even in defeat, gain him a promotion and a choice of commands. With Pike disabled in the battle, he chooses Enterprise People we meet: Scotty, Sulu, Uhura.

Movie 3: Wraps up the storyline, while introducing a few final characters, like Chekov and Rand. Gary Mitchell is killed while helping defeat the bad guy and Kirk's need for revenge is tempered by his wish to have peaceful contact with the villain's race. By the time the movie ends, everyone is in place and Kirk is the man we know and love.

Anyway, this is all very thin, but since I'm not actually writing it, I'm not worried about fleshing it out. But I would have preferred a multi-film progression than to have Kirk go from cadet on academic suspension to Captain of the newest starship in the fleet without the years of experience and maturity necessary for command.

Or, hell, I'll just take what Harve Bennett had in mind...

Actually, I'd be okay with what we got with just a good two or three rewrites to fill up the unnecessary plot holes And, you know, not giving Kirk command at the end...
