What I mean is, if the Klingons figured out that Spock gave false information on Organia, they might still conclude that the sifter would have worked on him if they had turned it up to a higher setting, even though they didn't try that. Thus, the fact that he seemed immune to the sifter on Organia would not be a reason to rule him out as a candidate for interrogation as a Starfleet officer knowledgeable about time travel.

You're saying that if the Klingons think "We better kidnap Kirk and try to extract information from him because we already tried it on Spock and got nothing," then they would be proceeding from a false assumption that there's nothing more to be gained from Spock. I agree: if the opportunity ever presents itself for the Klingons to kidnap Spock, I'm sure they'd use the mind-sifter on him again with a higher setting. Nothing to lose.
