Would TUC play differently if they used the bridge from TFF?

Imagine if instead of redressing the bridge set for TUC, they merely reused the exact same set from TFF.

As an aside, that bridge set up (TFF) is my favorite, it just seems so nice and laid back, but at the same time feels like the command center of a ship.

Anyways, how would the really dramatic scenes of Trek 6 have played if they were on the TFF set rather than the redress they ended up with?

It would have been against the tone of the film, which was much darker than the previous movie. They were wise to redress (and, more importantly, re-light) the bridge set for the sixth film.

I'm sure the crew would appreciate being able to see their control panels.

Didn't look like anyone had a problem seeing their control panels in The Undiscovered Country.

It's a control center not an operating room.

I don't think the film would be remembered as well with the brighter Trek V lighting and bridge set. That being said, the movie would have played out the same, with the same script. It just would have looked more like V which is never a good thing... IMO

They could have just changed the way the set was lit and that would have done most of it.

The fact there was physical controls instead of all touchscreen displays made a nice contrast between TUC and TNG which are set 70 or so years apart. IIRC, this was Nick Meyer's intention and he specifically requested that the bridge sets be redesigned.

Two words:

"Beige Alert!"

Holly - "Purple alert! Purple alert!"
Lister - "What's a purple alert?"
Holly - "Well, it's like not as bad as a red alert, but a bit worse than a blue alert -- sort of a mauve alert."

I wish they hadn't felt the need to keep changing the bridge. Different lighting would have done the trick.

Yup.

Heck, the TUC set is practically identical to the TFF set already, isn't it -- aside from relatively minor changes like the seven-segment-LED clocks, the retro control panels and some darker paint, I mean. Structurally it's the same, isn't it? (I guess they did swap the positions of the turbolift modules with a couple others...)

They still had touchscreen displays and controls in TUC, though. The Enterprise-A had them from the very start.

EDIT: That is to say it's odd in-universe wise to go from all touchscreen controls back to some physical controls.
