Why go into hiding after Ep3.

I hope that the new canon (Rebels, novels, comics) shows both Yoda and Obi-Wan actually being more active during The Dark Times than we know thus far.
.

This new fan trailer for "Kenobi, The Movie" would seem to agree with you, at least with respect to Obi-Wan.

Unless you subscribe to the belief Palpatine allowed Mace to get the upper hand to test Anakin and could have defeated Mace at any time during the fight had he wished to, which is still heavily debated in fandom to this day.

I remember an interview with Lucas where Lucas himself said Mace bested Palpatine fairly. Though it's never addressed in the way Palp acted towards the end, of course there is the only real debatable part of was Palp "acting" or "testing" Anakin.

I know the response will be "link it" but honestly I have no idea when/where this interview is and I'm not even going to attempt drudging through 100's if not 1000's of interviews with Lucas to try and fine one 10 second sound bit. So believe me or not, up to you.

I prefer that Windu was stronger, because otherwise it would seem that Siddious had planned everything too perfect, and too powerful

I also subscribe to the notion that Mindu really did have him beat until Anakin showed up. As I posted in another thread I like the idea that Sideous only chose to attack the Jedi masters as a spur of them moment thing and that he'd initially planned to go quietly and let the Republic eat the Jedi alive. But when the moment came, he decided to indulge himself and cut-loose.
Had Anakin been able to resist the temptation the stay put then Palpatine's overconfidence would have been his undoing.

Of course that wouldn't necessarily mean everything would have been all sweetness and rainbows. Windu would likely have taken control of the Republic, instituted martial law and instead of a Galactic Empire we'd have had a Jedi civil war and the Republic permanently fragmented.

From what I recall he's feared and despised in equal measure by the fleet and army officers (particularly the flag officers) but the Stormtrooper corps practically worship him.
It's all been de-canonised now but early on the in Heir To the Empire, there's a line from Zahn about how service aboard Vader's flagship was seen as path for rapid promotion so when it was destroyed it took a large proportion of up and comers with it.

No, I'm pretty sure what I'm referring to was in the 'Tarkin' and I think 'Dark Lords of the Sith' novels, which are canon.

In the 'Revenge of the Sith' novel, Palpatine is recording his conversation with the Jedi, and even speaks so to make it seem like they are accosting him. He kills two or three of them then runs to the door to call for help, then leaps back to his desk and push his lightsaber through the recording device and smiles, then starts to enjoy himself. He plays an edited version of the recording to the Senate.

Because the Republic and the Jedi had just gotten thoroughly trounced and were on the run. Sometimes you just gotta suck it up and admit you lost and hope to regroup at a later date.

I suspect you're thinking of the ROTS DVD commentary.
