Why didn’t They Just Seal the Wormhole?

What do you think??? The Wormhole
It was a last resort :) They tried to close it right before the dominion invaded but a founder sabotaged their attempt and made the wormhole more stable instead. Several others have tried to close it during the series and the wormhole has been closed in a couple instances.
 
They were worried about alienating the Bajorans and were saving it for a last resort, then the Founders made it impossible.
 
They had it sealed at one point but Sisko insisted on reopening it with the Orb of the Emissary. If they would have let it stay closed at that point the changelings would have died from the section 31 disease then the dominion should would have fallen apart.
 
They did try, several times, without success. As mentioned, there was a sabotage attempt which strengthened it and destroying it would be out of the question due to Bajor and their relation with the prophets.

I also imagine that the prophets themselves are smart and wise enough to be able to control the entrances and manipulate the wormhole as they want, I mean how can you destroy the wormhole when they can just "disappear" 1200 ships in the blink of an eye?
 
Why didn’t the just seal it or destroy it?

No, Starfleet is not a military organization, so it has orcas instead. The seals work for the MACOs. And the makos dine on the SEALs.
