I believe they preferred the sets over the movies I-III versions
I think so too. Especially, the 1701-A Bridge sets:
- TVH redress of TMP/WOK/SFS Bridge set
- TFF 1701-A Bridge set completely new build
- TUC redress of TFF Bridge set
Star Trek V's sets really looked cool. I wonder how interesting the film could've looked like if there was a budget for SFX?
I think the motion picture refit. I don't think they've improved with any version.
Enterprise B is also great. Whilst I just prefer Excelsior, the shots of the enterprise B from generations really don't do it any real justice. I started working on the model kit some years ago (still not entirely finished, but paintwork is finished, but worried about the application of decals and currently sitting in a couple of shoe boxes), and really came to appreciate the design. It is not as chunky as Generations makes it spear.
After that, I really like the Disco version.
I hated the D to begin with, but tend to see it fondly now through nostalgia fuelled, rose-tinted glasses.
Loved the E as a teenager when First Contact was released, but now hate it with a passion.

¿Que? The TOS Enterprise is one of the most commonly recognized fictional star ship designs in history. Just as easily recognized as a Star Destroyer...
1701-E is ugly, a Frankenstein monster of ship designs. It's kinda like Excelsior and then other sections it looks like a Starship Class refit. It appeared to be a ship which was brainstormed by too many cooks in the kitchen. What a let down after witnessing the brilliant designs of the Defiant and then after Voyager to get that brown matter of ship called Enterprise in the movie FC.
Wait, isn't the Enterprise-E basically the same shape as Voyager but with bigger nacelles (which IMHO look vastly better, Voyager's little ones look atrophied)?
I think that would still be the "D" for me. Grew up with that one.
I just don't care for it. Iconic, yes, but it also looks very spindly and dated. The refit has stood the test of time far better IMO. Not a popular view, I know, but I've always felt that way about the TOS Enterprise, even back in the early 80's.
The movie Enterprise carries almost identical design lines to the TV version, it's got the same basic sillouette as it's TV counterpart, but it makes appropriate adjustments in places to present a 'perfect' version of it, if you will. It's the TV version after a few nips and tucks. 
I can't help wishing they'd done the same with the 1701-D in the movies, instead of tanking the ship and replacing it with something that has a completely different design aesthetic to the TV version altogether.
