I'll be the first to admit I haven't seen every single episode of The Next Generation, but I thought I had the earlier episodes covered. Did Data's cat Spot just suddenly appear, or was there a story behind it?

As far as I'm aware s/he was just intended to be a one-scene joke in "Data's Day", but they liked the concept of Data having a cat so much that they kept writing him/her back in for little scenes throughout the show. Much to Brent Spiner's displeasure, as he hated the cat. 
In response to the title of this thread, "Spot" came from Data needing a name for his cat.
Presumably, Spot is from one of the shape shifter planets. It's amazing that nobody notices the changes in breed or sex. Perhaps some telepathic powers, too?

Although its almost a blink-and-you'll-miss-her cameo in Nemesis, and only then being cradled by B-4 (no scenes with Data).
Where did Spot come from? Food replicator. He was in the Ferengi Delicatessen Menu file.
He escaped from Bob Barker's rogue feline sterilization squad and was given refuge by the Enterprise.

No, she was from a colony on a planet that had been disputed by the UFP and the Klingon Empire since the 22nd century. The Klingon Augment virus was transmitted to indignenous species by a kind of fleas without any effects until it has been transmitted to Earther Cats by those fleas. The "Augment cats" are in constant mutations. Spot was cured by the Barclay virus.
I believe these actors made an appearance as demon currency on Buffy.

Wow, I missed Spot's cameo in Nemesis. What scene was she in? On a side note, if I get an orange tabby cat (which I doubt I would since I'm partial to Russian Blues), I would name him / her Spot!

Its the scene where B-4 starts rifling through the Enterprise's computer. At the start of this scene, an orange tabby cat (Spot) is seen in his lap, and B-4 is petting her.
There was originally a second scene at the end of the movie as well, where Worf and Geordi are in Data's cabin packing up all Data's things, and Spot "adopts" Worf as her new owner. But sadly it was discarded from the movie (its on the deleted scenes on the DVD and Blu Ray however).
More likely jumped up on the desk and walked on the keyboard....
