For ships seen on-screen I go with the Enterprise-E. For non-canon ships, the Aventine.

The Sovereign isn't quite up with the ones I mentioned, but it's still just below the "top tier" for me. And because any excuse is a good enough excuse for me to throw out more ship shots, here's another nice Sovvie shot:I like the Akira, Sovereign, and Defiant the best out of Starfleet ships (yeah, I can't pick just one either) and the D'deridex and Valdore out of other types.
Hmm, I can see what you mean... it does have some notable elements from both of those classes. I loved the design from the moment I saw it, and immediately thought it would make a great cutting-edge, almost brand new science vessel design for my Trek story ideas (which all take place in the 2390s). Here's an excellent pic showing all the main angles.That Diligent class looks pretty cool, kind of like an Intrepid mixed with a Defiant.

'Twas one of four ship classes (along with Akira, Saber, and Norway) to debut during the battle against the Cube in First Contact. Beyond that, it's been seen a handful of times in fleets during the last couple seasons of DS9. Though we've never gotten a very good look at it on-screen, honestly (the only FC ship that we HAVE gotten a nice view of on-screen is the Akira). The Steamrunner is another one that I really like, though it's not quite in "top favorite" territory. I used to have a nice little wooden model of the basic shape that a friend of mine made for me, but it had less detail (aside from being 3D), really, and got lost during a move about 8 years ago.Hey Triumphant, would you happen to have a bigger picture of the Nogura?
