What unseen parts of the ship do you wish we saw?

Speaking of the catwalk we see in Enterprise... When we see Scotty head up into the Jefferies tube near main engineering, isn't this the tube that heads up into the warp nacelle pylon? If so, it would've been interesting to see an episode where he has to crawl all the way to the top, giving us an interior view of the warp engine machinery and electronics.

If you count ENT's "In a Mirror, Darkly, Part II", the slanted tube leads into a rather shockingly spacious network of full-size service corridors. Personally, I never accepted this idea of "secret tunnels and trap doors". It looked way too over-the-top, part-techno-geeky, part cloak-and-dagger.

I always assumed that the tube was just what we saw of it. It's just an access crawlway, built along the contours of the ship's infrastructure, to access machinery (or conduits, or fuses, or whatever) embedded in that particular wall. I'm fond of thinking (no foundation for it) that the tube is located along one of the curves in the hull (like maybe the saucer undercut) where the hull becomes too thin for a full-height deck. That's where machinery is stored: in those undercuts. There may be sensors or power conduits or control computers and control lines (or whatever) embedded there, where they will not take away from living space. The tube would provide access to that equipment where a full-size deck isn't possible.

If you look at "Day of the Dove" and follow what Sulu is trying to do, it's obvious he is nowhere near the secondary hull or the warp pylons.
 
I'd like to see what's behind the red curtains in Spock's quarters. I think there should be a door to bathroom. And I believe that the room we have seen is only a small part of his quarters. The rest is behind the curtain.
 
Hey, I do not think he keeps any inappropriate things. I'm certain he stores his bike there. He has also a large window, and an entrance to one of the crawlways and a private lab where he grows some special vulcan tea. The rest of the crew would envy him quarters that big and with a bathroom, hence the curtain.

The bowling alley. Considering that most bowling alleys in the 60s looked like they came from Star Trek filming on location would not have been a problem!

That makes good sense.

I'll bet someone has a schematic that identifies the location of that notable Jefferies tube, but I'm too lazy to go digging for it. As Mytran pointed out, we only ever see one... so you'd figure there would have to be two. So, if not connected with the nacelle pylon, why did they make it slanted? Perhaps to echo the contour of the secondary hull, as you've pointed out. But probably "visual effect" is the real answer. ;)

There's a very nicely done internals profile diagram on Memory Alpha of the NCC-1701. Is that stretch along the back of the dorsal connector supposed to be the Jefferies tube we often see in the TOS episodes?

The Jefferies Tube was on a moveable piece of the corridor set, and gets setup any number of places, even on a corner at one point, so there are such access tubes all over that ship.

Besides, the angle is all wrong to going up to the nacelles (same problem with that tube assembly in the engine room).

While it was indeed built to be wild, the Jefferies tube was only ever shown in one or two locations.
In season 1 it was in a little room (with a visible ceiling!) situated opposite the yellow door to Main Engineering and accessed through a radial corridor:

In season 2-3 the tube was accessed directly from the radial corridor down from the (redesigned) Main Engineering doors:
