What if the Star Trek crew were a sea crew instead of space crew?

I know.
Humour. It is a difficult concept. 
...has me wondering if people get seasick in space.
They would be like govt-subsidised NatGeo explorers with weapons, with tv shows broadcasting their exploits, heavily redacted for security reasons.
Since Captain Cook's Pacific mapping and exploration expeditions had an astronomer and several naturalists in addition to a ship's surgeon, you already have CMO and Science officers sorted. Also a handful of (red shirted?) Marines for security.
Start with finding islands and their occupants., and overcoming (sometimes very strange) cultural and societal norms to eventually finding common ground.
Mix in some ruins and artifacts from advanced ancient (Easter Island ??) civilisation, King Kong and a sprinkle of Cthulhu to taste.
I would love to see that series.

Same here! But not an olden day ship. A futuristic submarine like the seaview or seaquest is my ideal ship!

Or even a bit of "Stingray" , which going slightly off thread has the best theme tune/introduction to a tv show ever imho. Driving drum breat alert and "anything could happen in the next half hour!". And it normally did.
The advantages to a sailing ship (imho) are the need for independent action and the the isolation ("only ship in the quadrant").
Surface boats should be used in the same manner as shuttle-craft for the star-ship. But they could be produced with both engines & sails in case of engine breakdown. They should be used for taking crews to surface areas not acceptable for the submarine. It would be a great show.

They could take visitors and/ambassadors on a quick 3 hour tour of the lagoon.

I once drew the Voyager crew as pirates. Sadly I don't know where it is right now, but here's the general rundown:
- Janeway has an eye-patch. (Because Kove.)
- Chakotay has sexy bangs and lots of pirate tattoos.
- Neelix is the flask-swigging Gibbs-style pirate, and Kes is his wench
- Seven is the sultry lady pirate, up in the crow's nest with the telescope (because astrometrics)
- Tom Paris is the Erol Flynn wannabe
- Naomi's the cabin girl
- Q is the mermaid on the mast
Is there a reason McCoy and his sister from a different mister, Pulaski, are both Chief of the Boat?
The wise old seadogs who have been there, done that and seen it all before, providing the voice of experience to their respective Captain's and all the fresh-faced non-coms under them.
Doesn't fit the McCoy/Pulaski character type to me. But it's your ship.
Isn't one of the central thoughts of Star Trek "what if we could have something like a 18th century (*) navy.... in space"? Why would you want to invert that formula if it results in something we already had long before Star Trek? (That's of course not to say that you couldn't make a very good series about a navy from whatever century you see fit, because you can, I just would see no reason to slap "star trek" on it).
(*18th century as in: still much unexplored territory, ships have to be largely self-sufficient in unknown territory with months of travel time involved, etc).
