What great shows have I missed?

That's not what I meant. For example, let's say he listed the following shows as the kind of shows he watches, and that he's not big on sci fi/fantasy/supernatural -- NCIS, Law & Order: SVU, CSI, The West Wing, Seinfeld, Cheers, NYPD Blue, Scrubs and The Office. There will be people that will completely dismiss everything he just said and tell him to watch Buffy, Angel, The X-Files and Supernatural.

Good point. I've even seen people recommend shows that the OP said he watched. Recommendation threads tend to turn into 'things I like under this heading' threads.

Kinda like how people are naming shows that aren't on DVD yet.

They will be, tho. Anything decent comes out on DVD anymore. The stuff already mentioned that is out on DVD would take years to get thru at a reasonable viewing pace. By that time, Pushing Daisies and Sarah Connor will be long since out.

Anyone who has Netflix can just queue it all up - even the stuff that hasn't yet been released.

I decided to start by catching up on LOST. It seems like someone that would appeal to me, but I missed the first season, and it didn't seem like something I could jump into in the middle!

In that case, I double my recommendations for anything from HBO or Showtime. If you like Lost, you should steer clear of the plain vanilla brand of TV (cop shows, lawyer shows, sitcoms) unless they're unusually good examples of their genre (30 Rock for sitcoms, Damages for lawyer shows).
