The 1701A was dubbed a Constitution-Class vessel in the blueprints that Scotty was looking over when he was sitting alone in the wardroom in TUC. (see: Screencap from TUC )

That contradicts the Enterprise-Class sign for the trainer seen in TWOK, something set up by Lee Cole to acknowledge Andy Probert's work which indicated the refit was Enterprise-class.
Accepting that TUC reference as THE reference is like accepting FLASHBACK's notion that Sulu's science officer was killed before the end of TUC, when he is alive and well in the final scene of that film.

I don't trust "Flashback" as seen, since the whole episode took place in Tuvok's mind, which was understandably traumatized. Thus, nothing in it (including Valtane's "death") can be taken at face value.

That's what I always assumed, yes. The simulator was made to resemble the Enterprise, therefore the simulator is Enterprise class.
The Enterprise-A is Constitution class, of course. Anyone who's seen ST VI knows it. And if the Ent-A is of that class, then so must the refit 1701 be, since the ships are identical in design and appearance. Even so, we already knew the *original* 1701 was a Connie, and a refit does not change the class.
