A harvest lasagna with loads of veggies--squash, bell peppers, black olives, tomatoes, mushrooms, eggplant with wheat lasagna noodles and to help cut down on the calories I halved the amount of Ricotta the recipe called for and combined the Ricotta with canned pumpkin to add to the fall flavor. Then a simple salad of lettuce and tomatoes with balsamic vinegarette and garlic toast.
