I say, stick to 12 credits so that you don't over-exhaust yourself. That's how I did it. However, if you feel compelled to take another class, I would do something fun. Take a film class. :)

Try taking 14 grad credits in engineering and an upper division 3 credit chem class all at the same time.
 
Well, languages are fun to me. I'm taking film this semester, I've already taken Archeology, and I don't think they offer Buddhist meditation.
There are some terrific Russian films out there, but some fine French films as well. I think Russian if you want a challenge, or French if you want to have a better chance to use what you learn.
 
Doing less work is always good.

But if you must take a class, knowing a bit of French is useful if you ever visit. It's also a fairly easy language to pick up the basics of.
 
I'd go with Russian. At least, you'll be able to read Kyrillic afterwards. I only had half a year of Russian in school but it still offered some interesting insights.
