And it's science fiction set 150 to 1,150 years into the future. We wouldn't be hearing a lot of "realistic, real life dialogue" to begin with.

Star Trek is a TV show where the bridge is one of the show's central sets. Of course a majority of the character interactions are going to take place there, including meaningless banter and shooting the shit as opposed to the bridge dialogue being strictly "professional and realistic."
Besides take a look at all TV shows, you'll see the characters engaging in banter and casual talk even in environments which are considered formal and professional in the real world. Because a TV show's goal is to entertain the audience. not depict a faithful and accurate depiction of a working environment.
I am not. Most conversations on the bridge would be very boring, at best.
Go look at World War II movies, made in the 1940s and 1950s.
In essence, we are seeing the same thing.
In one of the most egregious examples from recent times, was(spoilers) where Michael Burnham, had to kill, another crew member...
On a count down clock of all things. First, the consequences of not shooting or other event, were far more terrible than the shooting would have been.
It wasn't a question of ethics or morality, but of necessity of the moment.
But what did they do? Drew it out to ridiculous number of minutes.
Should Michael have had difficulty with this? YES!!! But not in the moment. Because she knew the stakes.
In other words she wasn't being ethical. She was endangering every body.
No, this is not how you write.

It often breaks my brain how often the people part is dismissed as being unimportant.
To the contrary — it’s pretty much always about the people. And it’s almost never about actual exploration and research, which to my find is a flaw.
I remember reading in one of his books (or maybe it was Nimoy's - can't recall clearly), how his falling backwards and not quite making it into the chair was a complete accident. I think he intended to land in the chair, but instead caught the back of his heel on the riser platform underneath the chair and he went down on the floor. Nimoy wisely recognized the profound moment happening and allowed the cameras to continue to roll until the scene had completely run its course. The result was a perfectly organic and natural moment that will live forever in Trek lore.
I know some might find it laughable, but I always thought Shatner should have gotten an Academy Award for that performance and Nimoy for writing/directing it.
The writers have paychecks that say otherwise…

he has his great emoting scenes but honestly i think Shatner is at his best when he's just playing it subtle.

I don't doubt he has the tools, but I think he lacks taste and sensibility.
Maybe it's not how you write. But it seems a perfectly legitimate way to do that scene.
