Well, this will sound ignorant but what's a rasher? I'm guessing a type of cut of bacon?Controversial opinion: I prefer the back bacon rashers commonly eaten in Britain and Ireland over the streaky/fatty and generally more sweet and smoky American kind made from the belly cut.

I avoid fatty bacon if I cook it. Takes too long and if I'm going to cook it it needs to be crispy.

Quick read of the article says it's not typically found outside Ireland and England. But, I imagine you might be able to call a local butcher and see if they could do a cut, since it's using a different part of the pig.Looks good. Can it be found here in the States?
