We don't know they didn't. There was quite a gap between Jake's attempt to save his father in wormhole and his father appearing just as he is dying. There could easily have been a war in that time.
We can assume that there's a big gap between the last time we saw Lofton-Jake and the first time we saw Todd-Jake. A war could have happened then too.

Umm, it was the Cardassians and the Romulans that commited that first strike that irritated the Dominion... not that the Dominion didn't twist the event into their favour, but... it wasn't just the Klingons, its not as if if it hadn't been for the Klingon/Cardassian war and its outcome the Dominion wouldn't have attacked.
Believe me, we were planning to for quite a while...
