The first episode of VOY should've been the ship blowing up and everyone dead in the future, then the 2nd episode through Season 7 would be the events leading up to that eventuality, or perhaps them trying to avoid that fate.... just thinking out loud here

You may be thinking of TNG: Cause and Effect, where the ship blows up in the teaser, and they spend the rest of the episode trying to figure out what's going on.
