Although I disliked the series, I thought enterprise made the best stab at this - desert uniforms for deserts, pockets to carry things etc.
Agreed, the ENT uniforms were the most realistic/practical looking uniforms in a ST series to date. A duty uniform that could be out on quickly, and had places to carry stuff. A seperate dress uniform. Variant uniforms for different environments.

Indeed. Conceptually, I think TMP had the best "system" but it wasn't executed well with the actual designs.

I always liked the somewhat more casual jacket that went with the TWoK-TUC uniforms - the one Scotty wore in II-IV and Kirk had in V.

The real military has several duty uniforms for various purposes and it makes dramatic sense as well to be able to dress the characters in different costumes for particular scenes. Most common comment I get from non-trek people " why do they wear the same clothes every day?" Seems pretty stupid when you actually hear someone ask that. TMP had the best and most practical costuming of all the films, with a complete variety of uniforms from dressy to casual to "get-under-the-hood". And the propulsion crew even wore hazard suits when the Warp Drive was on. It all just made sense and lent to the dramatic presentation by being able to costume the actors to set the tone for particular scenes. -And note that Nimoy has that high-necked undershirt through the whole film to make him look "uptight".

Its funny, I used to think the TMP uniforms were terrible, but with the passage of time they hold up pretty well. Dr McCoys disco collar aside, they seem pretty functional.
Oddly, its the TWOK red uniforms that have dated somewhat - they look rather clunky and woolly now. Shame really, as they always were (and pretty much still are) my favourites.
