Seven and Naomi played a board game that looked like a cross between othello, tic-tact-toe and connect four, as far as I can make out. The name sounds like... cat's cat...

That's right. Something like catiscot.
 
Picard was a big ships-in-bottles guy.

So was O'Brien.

Worf was shown building a model sailing ship in one episode, I forget which. He was putting on a delicate piece and the door chimes, startling him- the ship was ruined. The person (Riker) apologized for interrupting him, Worf slid the wreckage into a drawer and said "Just finished".
 
Kirk -- Shakespeare (and perhaps Renaissance lit more generally, as he catches Khan's Milton allusion)

the doctor -- opera, golf, holo-photography (What is holo-photography, by the way? It appears to be a way of putting clunky, old-fashioned cameras and slideshows into a 24th century show by affixing the prefix "holo" to "photography.")

Naomi -- Flotter
Janeway and Seven -- velocity
