Kirk was a student of history and had a "fondness for antiques."

Spock's the kind of guy who'd do differential calculus in his head for fun.

Scotty read technical journals to relax.

Uhura sang.

Troi loved chocolate.

Geordi boffed babes on the holodeck.
 
I just watched an episode of DS9 and Odo said he liked to read 20th century Earth crime novels.
 
As well as dancing, Crusher also produced and directed plays and other theatrical productions (didn't Riker and Data take part in these, too?).

Sulu liked weird plants.

Troi still enjoyed Wild West stories from her youth.
 
I always felt that many of the hobbies featured in 'Trek were a bit "white bread" me. I mean, you have access to the gym and the holodeck. Take chances with it. I guess that is why I did not mind AU Kirk was into 20th/21st century hip hop...and driving cars over a cliff at quarries.
 
Picard also enjoyed building model ships, at least when he was young ("Booby trap"), Obrien built model starship engines (Again, when young)..Trip enjoyed classic cinema..Spock played chess and enjoyed his Vulcan lute thingy.
 
Picard also does fencing.
O'Brien, kayaking and tennis.
Bashir, tennis. Trying to win historically unwinnable battles.
Dax and Quark, Tongo.
Janeway, gothic holonovels.
Kim, clarinet.
Neelix, berating Tuvok for not expressing emotion.
 
Season one Worf - cocaine. Hence all his batshit crazy behaviour like jumping over the railing and nearly shooting the viewscreen then Q appeared on it.
 
Hardly out of nowhere--Gates McFadden is a choreographer as well as an actress.
But Dr. Crusher is most certainly not. lol. It's 1 thing to let actors infuse bits of themselves into their long running parts, but it's kind of silly when the bits they're adding are just actor stuff. It was a stretch when Data was doing Shakespear & such, but at least that could be explained away, as part of all his human experience things. With Crusher, it just flew at the screen like a pie in the face. Still a funny scene though, but by the end of the show, the Doctor is heading up the ship drama club. It's just weird imho

Yes. Barkley stars in Cyrano De Bergerac, Riker is doing something in Frame of Mind, & Bev coaxes an audition out of Geordi for Pirates of Penzance in Disaster

I'm surprised that nobody mentioned poker, yet.

- Obviously, the reason why Crusher had to dead-head so many of her orchids is that she was spending too much time at the poker table with Worf, Riker and Data :D

Like Tuvok and Suder. Though Suder could have started it because of Tuvok.

Also, there seem to be some characters with "inconsistent" interests. For example, I always found it funny that Tom Paris was normally used (especially early on in Voyager) as a counterweight to the sciency types on board : 'eurmmm... all that tech talk means the ship is gonna blow up if we don't get out of here, right ?', but that he suddenly was the expert in 'advanced subspace geometry', which to my ears doesn't exactly sound like an introductory course in science.

Or it would have to be that his love of all things that can make you go faster won out over his usual predispositions ;)

Also she was growing some kind of red moss (or it was part of an experiment) in the episode where they all lost their memories of an entire day. I can't recall the title of that.

It makes sense to draw characters' interests from talents that the actors have, and people besides professional actors do tap-dance, just like people learn instruments and play sports.
