T'Pau should have been ticked ...

Kirk recognized T'Pau. It was clear that she was the one running the ceremony.

Kirk made that assumption before any running had taken place, simply because he knew T'Pau was a leader by profession. But Elizabeth II did not run the wedding of her son, nor did Prime Minister Cameron, despite their prominent presence.

Since Kirk and McCoy had never attended a Vulcan wedding before, why wouldn't they consider everything normal?

Hmh? That's the point - they'd believe everything and have no way of knowing the truth about anything.

...But he might have been the only one to hold that conviction. The original claim that it was "obvious" that Stonn was to fight is the one I find dubious. The spirit of the episode would rather suggest that T'Pring had been refining her plan for years in advance, and would never have risked her beloved when logic gave her a perfect out.

She didn't choose that, it was all politics happening over her child's head.

While pon farr is supposed to be about choosing a mate under the influence of lust and out of control, there was nothing lustful, irrational or uncontrolled about the pairing of T'Pring and Spock as far as we can tell. Perhaps it's just modern Vulcans who preempt the illogic of pon farr by preselecting the pair and then enforcing the liaison with telepathy. Or perhaps this has always been done, and it's pon farr that is the relatively modern counterreaction to the tradition?

Either way, it seems conventional Vulcan logic favored and indeed dictated the pairing of T'Pring with a half-breed. So her objection to that would not be viewed as logical, but rather as emotional (the blunt instrument of Vulcan argumentation). A bloodline that did not involve a quarter-breed would be the one soiled, then, and the child would supposedly suffer from not having the mandated human blood.
