Technically better? Yes. Better, more engaging experience? Debatable.
The biggest problem with the re-mastering (apart from the fact that it was done at all) was how tastelessly it was done. The original bright lighting was needlessly shadowed by people who thought they were making the show more dramatic-instead they only succeeded in making the show look silly. & you can't reverse engineer the image to get the original look
If one is trying to recapture what you remember from seeing TOS the first time...see the following..

Please note the blurred washed-out images typical of color TVs from the 60s until the mid 2000s... 480I or less...
As has been stated upthread, the only way to see it that way would be on videotape on an analog TV set... I guess you even could tune it badly through the tuner in the TV to get snow if you like for the final touch...
Analog Trek died when the DVDs were released..even on the earlier 2 episode DVDs, the picture was sharp enough to discern the flaws in the production (wood grain, label maker panel marks and the like) And they looked sharper with much better contrast levels than the tapes.
With the advent of HDTV the flaws became even more pronounced..and in 1080P, things only got worse.
Sorry to say that TOS
had to be updated for the new HDTV technology--To me in HD the old effects are simply jarring with blurring-effects bleed through, even loss of shape of the models used..(at one point the Enterprise lost it's secondary hull in a long shot)
Yes, there are effects in the remasters that didn't fit the bill...but for the most part, the effects team did try to do a good job within the time-constraints and budget provided.
However if one is a purist, then one can purchase the older (1980s) VHS tapes and transfer them to DVD.
Or if one prefers, just get the blu-rays and watch em with the original effects.. watch what you like... just remember one can't undo what already has been done, no matter how much thay may desire it..
