TOS Remastered DVDs

I want to show my kids the remastered TOS episodes with the digital effects before taking them to the new film in May. It's my understanding that the discs are HD DVD (RIP) on one side, regular DVD on the other. Does this mean I can play the DVD side on a conventional DVD or Blu-Ray player?

I had hoped maybe Paramount would issue them on Blu-Ray before the movie, but I understand now that's not going to happen.
 
Only season 1 had a HD-DVD side (it's a hybrid - standard def on the other side). Seasons 2 and 3 are standard def only.
 
And if you listen to the rumours, it's possible the Blu-ray release of S1 will be appearing around the time of the new movie after all...
 
So, if I buy Season One, I should be able to play the regular DVD, non-HD side on a standard DVD or Blu-Ray player?

I have the older edition of TOS, but I think the kids may more readily accept the redone versions...then I want to show them selected episodes from TNG, DS9 and Voyager, as well as movies one through ten (perhaps minus STV). I know there's not time in three short months to show them everything.
 
Do the remastered episode DVDs have all of the scenes or are they edited like what is seen on TV?
