Having the Enterprise lost in the Delta Quadrant (either by accident or sent there deliberately by uberbabble to search for Voyager) would make a nice explanation for why we didn't see her during the Dominion War.
A minor reworking of the Voyager episode where they visit the wormhole mentioned in The Price could have the Enterprise meeting up with Voyager but do to the instability of the wormhole only one ship makes it back to the Alpha Quadrant.
