What episodes have you seen. Hate to recommend anything that you have already seen or know about.

For me though, I'll just recommend episodes from each season I think are really underrated:

A Taste of Armageddon
The Conscience of the King

Season 2

Piece of the Action
The Immunity Syndrome
Bread and Circuses

Season 3

The Empath
All Our Yesterdays
Requiem for Methuselah

The Cage, closest TOS came to TNG.

Anything from the first season. TOS is one of those rare shows where the characters seemed to mesh and work together right out of the gate. While the first regular episode ever filmed (Corbomite Manuever) was brand new, you would think the actors had been working together for years. A true testament to great writing and great acting along with natural chemistry.
