I always thought it was to show the drastic change in his personality in the AU timeline.

I thought it was a concise way to sum up their relationship to the Doc.
I always saw it as showing how cynical and bitter he had become, a long way from our optimistic young ensign who would never have said such a coarse thing (and, in general, showing how he refused to go on with his own life).
Have you ever had to share a small space with a couple who think that they can frak quiet enough that you won't wake up? I mean, if they can bone without waking you up, more power to their physical fulfillment, but lets be honest, even if you do sleep through the conception of their baby, most humans can still smell fresh sex in a small room for hours after the dirty deed.
How long had the three of them been living figuratively almost on top of each other, while two of them had been literally living on top of each other?

"NOTHING HUMAN" is technically the 100th produced, since "CARETAKER" is considered, production-wise, 2 episodes.
Caretaker is considered episodes one and two, but it still had one production number. (One script: one production number, two scripts: two production numbers.)
