Why did they all gain after seven showed up I can only speculate.

Yes, we can speculate. She did say she moonlighted on weekends in a restaurant kitchen while working on Boston Public. Maybe she did something similar during VOY and brought in samples.
 
I never noticed any weight gain from any of the cast. Though I will say Kate looked way more different face-wise in the later seasons. I think it was the wig vs her real hair.
 
Actors do sometimes get thicker around the middle when in a successful series, simply because they're eating more regularly. Frakes is a good example. In TNG Season 1 he's pretty lean. Then in '88 he got married and was probably getting bigger paychecks than he'd ever seen before. That's when he started getting heavier.

These are the bad things about Chak:

The angry warrior speech. Seriously, would you EVER have sex with a man who told you a parable about his feelings for you? That is scary passive aggressive. It's gross. It's weird. It's super unsexy.

Oh Chak, why did you do it.
The whole mystic spirit animal thing. I can see two scenarios:

I always thought it was the other way around. For example, by season 6 of Buffy, SMG looked very bony. You're on set for like 12 hours, when is there time to eat between memorizing lines and filming?
There's usually a crafts services table set up filled with food and drinks on a soundstage, so the actors can nibble all day when not on camera. This might vary with productions though. Maybe Whedon wasn't feeding the cast and crew.

I found The Chute to be utterly boring. It was all I could do to not skip it and move on.

"The Chute" has its good spots but most of them takes place when the action is on the ship, not at the prison station.

Most of it, its' all about Kim's role as the series "whipping boy" which means that he's beaten up a couple of times and the viewers should feel sorry for him.

That's right. But he comes up as rather obnoxious during the episode (thanks to the clamp) while Kim is the one to feel pity for during the whole episode.
