Why would the Founders give the Vorta poor sight, but good hearing when they should have both if they are diplomats and scientists for the Dominion? 

I don't see why the Vorta would need particularly good eyesight to perform the kind of diplomacy the founders want. It's not a spectacularly subtle business anyway. Entice, chide, threaten, attack. Repeat as needed.

We Vorta have nice hair.
I wonder about the visual 'tells' that are very useful to pick up on during negotiations. If an ambassador does a particular eye twitch when he is trying to lie, it would be good to be able to see across the room- not every nuance is audible.
Eris is a special clone. I keep on asking myself, if Eris' successor clones are also equipped with mental powers.

I always figured that the founders just didn't bother with much change in the Vorta's original genetic makeup as we know they didn't make them from scratch
Still, I firmly believe that Vorta should file a complaint with the CEOs of the Rondac III clone facility and make them address this flaw in the genetic matrix of the Vorta. What is the point of having a god near at hand if you can’t scrounge off some tangible perks?
Vorta are loyal, they are diplomats and scientists, they supervise the Jem’Hadar and relay the Founders’ policy to the troops and the alien races in the Dominion. They are very useful for the Dominion. And they are funny and intelligent and have good looks. Really cute and eye-catching and as honest as any other diplomat or negotiator.
They were genetically re-sequenced, they were nothing like the original ape-like creatures who helped the persecuted changeling. The Founders boosted only these traits in the original genome that they saw as priority, neglecting sense of eyesight or artistic abilities as irrelevant to the Vorta’s functionality. Probably their eyesight was not perfect even before. They lived in forests, they weren’t predators, they ate only berries and nuts. They did not need very sharp eyesight in the twilight of the forest, they did not hunt, they mainly hid and avoided predators.
